7 cups chicken or shrimp soup 1 chopped lemongrass (tanglad), or 2.5 to 3 tablespoons frozen or bottled lemongrass 4 slices of lime leaves 4 cloves of garlic 1 teaspoon of galangal or ginger 1-2 slices of red pepper or 1- 2 teaspoons Thai chili sauce 2 medium tomatoes, chopped fresh mushrooms (white mushrooms, cremini or enoki mushrooms) 1 can (14 ounces) coconut milk 2 tablespoons fish sauce 1 tablespoons soy sauce 1-2 teaspoons chili sauce 2 Lime (or lemon) juice 1 teaspoon sugar 1 /4 cup fresh coriander (cilantro), 2 cans of golden sea yellow fin tuna, olive oil and chili 185 g

1. Put oil, garlic, chicken or shrimp soup, golden sea yellow fin tuna, olive oil, and lemongrass in a deep pot and heat over medium heat. Let it boil.

2. Add golden sea yellow fin tuna chunks, mushrooms, tomatoes, galangal/ginger and chili. Turn the heat to medium and simmer for 2-3 minutes.

3. Set aside the golden sea yellowfin tuna chunks, mushrooms and other vegetables.

4. Turn the heat to low, add coconut milk, fish sauce, soy sauce, lime juice and sugar. Mix well and simmer slowly until hot. Don't boil. Taste the soup from time to time while adding salt and spices, adding more fish sauce instead of salt or more chili as needed.

6. Put it into a bowl. The golden sea yellow fin tuna cubes topped with olive oil and chili, and sprinkled with fresh coriander.
